Noodles Worth Dreaming About

Some places become part of your Bali routine almost without asking permission. Mie and More is one of mine. Hidden in plain sight on Batu Bolong, this small neighbourhood warung was created by Sinchien Nin, a woman whose enthusiasm for food becomes obvious almost immediately. The proposition sounds deceptively simple: homemade noodles inspired by Sichuan flavours, served generously and without unnecessary ceremony. Then you taste them.

And suddenly, simple is no longer quite the word. The noodles are made in-house and come with beef, pork, chicken or mushrooms, alongside dumplings and Sinchien’s wonderfully addictive chilli oil. But Sinchien has also developed a genuinely vegan option, using her own egg-free noodles and a mushroom-based recipe — not as an afterthought, but as a proper dish in its own right. It says quite a lot about the way she approaches food: with curiosity, generosity and the desire to make everyone at the table feel considered.

Sinchien describes herself as a food scientist and author, which perhaps explains the curiosity behind what she cooks. Her book, The Creative Taste: Building an Iconic F&B Brand From Scratch, explores the creative process behind building an authentic food and beverage concept, something that makes considerable sense once you have experienced Mie and More itself. Nothing here feels designed by committee.

The room has just as much personality as the food. Its walls, covered with pages torn from fashion magazines, give the tiny space an unexpected and distinctly feminine character. It feels personal, playful and slightly improvised — much closer to someone’s own universe than to another polished Canggu restaurant concept.

And that is part of its charm. You come in, take a seat, order a bowl, add as much chilli as your dignity allows and leave properly fed without having done significant damage to your wallet. Current menu listings put most noodle dishes roughly between IDR 45,000 and 60,000, an increasingly pleasant anomaly in this part of Canggu.

For me, Mie and More has become an essential stop whenever I am around Canggu. Since discovering Sinchien’s noodles, they have acquired the slightly unreasonable habit of appearing in my thoughts — and occasionally my dreams — when I have been away for too long.

You can, of course, have them delivered through GoFood. That might satisfy the craving.

But it would also mean missing Sinchien. And when the personality behind a place is part of what makes it worth recommending, ordering from a screen is only half the experience.
